The V60 is a pour-over method that hides nothing. Because water passes through the grounds in a thin, even stream, the cup you get is bright, clean and fully "readable", every note of the bean comes through, and so does every flaw. That is exactly why not all coffee beans suit V60 brewing, and why the beans you choose matter more here than with almost any other method.

How to brew V60: the way we do it in our café

This is the exact recipe our baristas use in the Cantata café. It's simple, repeatable, and it's the fastest way to get a great cup at home.

What you need: a V60 dripper, a paper filter, freshly ground coffee, and water at 90–93 °C (just off the boil).

Ratio: 20 g of coffee to 200–250 ml of water.

1. Rinse the filter first. Place the paper filter in the V60 funnel and pour hot water through it. This rinses away any papery taste and preheats the dripper and cup. Discard the rinse water.
2. Add the coffee. Tip your 20 g of ground coffee into the wet filter and give it a gentle shake so the bed is level.
3. Pour slowly, in small stages. Start pouring your 90–93 °C water carefully, in small amounts. The goal is to keep the whole coffee bed covered and saturated, but never to flood it. Add each pour only as the previous one draws down.
4. Stop at 200–250 ml. Keep pouring in small portions until you've used your full 200–250 ml. Don't overshoot the water: the ratio is what keeps the cup balanced.

Prefer it iced? The same beans make an excellent cold V60. Brew directly over ice using the Japanese iced-pour-over approach, the clarity of the V60 makes single-origin beans taste vivid and refreshing in the Dubai heat.

Coffee beans for V60 in the UAE: single-origin & specialty

For a classic V60, single-origin and specialty beans are the natural choice. Specialty coffee is scored 80+ points on the Specialty Coffee Association (SCA) scale and carries full origin transparency: you know the country, region and often the exact farm. Brewed as a pour-over, these beans reveal their real character: notes of berries, caramel, nuts or chocolate, with no additives and nothing hiding the coffee itself.

Flavored beans that brew clean in a V60, and even in an espresso machine

Most flavored coffee has a reputation for being greasy, for clogging grinders and for tasting artificial. Ours doesn't, and that comes down to how we make it.

Our flavored beans are built on a 100% Arabica base, sourced mainly from Colombia and Brazil, with a few flavors built on Robusta from Indonesia. The aromatization happens at a very specific moment: right after roasting, while the beans are still hot and their pores are open, we introduce a food-grade aromatic oil. Because the beans are warm, the aroma is drawn inside the bean, and as the beans cool, the pores close and lock the flavor in.

The result of this proprietary process is a flavored bean that stays dry and non-oily on the surface. That's not a small detail: it means these beans won't gum up your grinder and can be used even in an espresso machine, something ordinary oily flavored beans simply can't do. In a V60, it means you get a clean, aromatic cup with no slick residue on top.
