Oolong (烏龍茶) is a category of semi-fermented teas, located between green and black in the degree of oxidation (8–85%). It is produced from the leaves of Camellia sinensis using a method that includes withering in the sun, shaking to partially destroy the leaf structure, controlled fermentation, twisting and final drying. Visually, oolongs are distinguished with a “ribbon” twist and “pearl” twist - each with its own organoleptic characteristics.
Taste characteristics
- Light oolongs (light fermentation): creamy-floral, with notes of milk, lily of the valley, young greenery.
- Medium-fermented: fruity-almond, with a soft astringency, aromas of stone fruits and nuts.
- Dark oolongs (high fermentation): woody, with smoky, mineral, caramel notes.
One variety can produce up to 6 infusions with variable aromas. Used in gongfu-cha or for steeping for up to 2 minutes at a temperature of 85–95°C.

How to brew oolong tea
To reveal all the taste qualities, it is recommended to use a porcelain Chinese gaiwan or a ceramic teapot. Water temperature is 85-95°C. You can brew it multiple times, with each brewing the tea reveals itself in a new way. Proportions: 5-7 g per 150-200 ml of water. Steeping time is from 30 seconds to 3 minutes depending on the strength.
