Instant Coffee in Dubai

Why freeze dried instant coffee tastes better
Instant coffee is brewed coffee with the water removed. How that water leaves the cup decides almost everything about the flavor.
Spray drying blasts liquid coffee with hot air at high temperature. It is fast and cheap, and it burns off the volatile aromatics that give coffee its fruit, chocolate, and nut notes. What survives is bitterness and body, which is why budget instant has that flat, slightly scorched profile.
Freeze drying takes the opposite route. The brewed coffee is frozen solid, then placed under vacuum so the ice converts straight to vapor without ever becoming liquid. Nothing is cooked. The aromatic oils and acids stay intact inside the granules, and they reactivate the moment hot water hits the cup. Every jar in this collection is freeze dried, which is why the granules are irregular crystals rather than uniform powder.

How to make a proper cup
Dosage matters more with instant than most people assume. Use half a teaspoon per 150ml of water. Going heavier does not make the cup stronger in any pleasant way, it makes it harsh.
Hot: Add half a teaspoon to your cup, pour hot water, stir. Water just off the boil, around 90 to 95°C, is ideal. Boiling water straight from the kettle can scorch the granules and flatten the aroma.
Creamy: Skip the water and pour hot milk directly over the granules. Freeze dried coffee dissolves in milk without the clumping you get from cheaper powders.
Iced: Dissolve the granules in a small splash of hot water first, then top with cold milk and ice. This step is not optional. Adding granules straight to cold liquid leaves you with undissolved specks at the bottom of the glass.
Dalgona style: Whip two teaspoons of instant coffee, two teaspoons of sugar, and two tablespoons of hot water until it turns pale and holds peaks, then spoon it over iced milk.
A wide mouthed mug or tumbler makes stirring easier, and an insulated travel bottle turns a jar of instant into a genuinely portable coffee setup for the office or a desert drive.

Storage in the UAE climate
Humidity is the enemy of freeze dried coffee. Once moisture reaches the granules they clump, and clumped granules have already lost aroma. Three rules keep a jar tasting new to the last spoon:
- Close the lid tightly and store in a cupboard, not on the counter next to the kettle where steam collects
- Never dip a wet spoon into the jar
- Skip the fridge. Every time you take a cold jar out into warm Dubai air, condensation forms inside it
